I use MAC OS and I have all my pieces in several formats, so I tag them, with several tags, to make sorting and selecting easier.
Is it possible when importing pieces to import the tags as well?  or do I have to go through and tag them one they are in my iPad?

I need more information on what file formats you are utilizing and how you've added those tags in order to answer that. For example, if you use PDFs with PDF metadata, you can enable Settings->Import Settings->Extract PDF Metadata. If they are ChordPro files, you can enable Settings->Text File Settings->Use Text Fields during Song Creation.
