Is it possible to alter the page numbers of mobilesheets to match the page numbers of my music?

You can't currently do that in MobileSheets itself, but if you use PDF page labels, you can enable Settings->Display Settings->Show PDF Page Labels and MobileSheets will use those labels.

I tried adding page label with PDF24 Tools but MobileSheets does not see the pagination. I am now learning about pdf metadata, I hope I don't have to use Adobe.

Unfortunately, I've only tested it by using Adobe Acrobat, but I also tested files from users that had page labels, and it worked. I'm happy to look at whatever you generate if you need some assistance.

From my experience, I can only recommend editing the pdf so that the page numbers of the print and the pdf are identical (I use pdf24).

That means shifting (not necessary) pages from the begin to the very end of the pdf or add empty pages at the begin.
In very rare cases a combination, e.g. shifting the index to the end and add empty pages at begin. Takes 1 minute/PDF.

This way nothing is lost and you can restore the pdf if you would need it.
Otherwise, sooner or later, you'll going confused if you open the pdf with another app/PDF-viewer or comparing with other guys.
Even in case of creating/correcting *.csv's.
