Currently, by long pressing an activated metadata field or opening the Select Items dialogue in the piece editor, I can select Add or Remove. I would like to also have an "Edit" option (in case I find a typo or decide to change something).

Sounds like a useful idea.
I was not aware of the "delete" option by now.

In this case, are you just wanting to rename the group? Or are you wanting it to switch to the group editor screen? The first one is probably doable - the second one will create all sorts of problems, so I want to verify.

Imho it's just a nice to have with no high priority. Being able to rename a group that's shown in the list would be fine and fully enough.

Yes, simple rename avoids many clicks in the cases where it is relevant.
