Is there a way to create and add notes to setlists, not just pieces? I write notes for every concert of all the instruments & accessories I need, instrument changes, seat moves etc and I'd like to be able to pin those to the appropriate setlist in MS. If I now have all my music in my tablet it makes sense to have my notes there too...

I think it would be nice if it was slicker, but what I do is that I have dummy pieces, so my set lists have a Set 1, Set 2, Encore, Extras.
The default dummy pieces just say Set 1, Set 2, but they could be distinct for every performance, just using the annotation tools. I have smart buttons set up on these pages because I use MIDI to my pedal board and depending on which guitar I am using I set it to direct or an alternate patch configuration.
So, that might do what you need.
In Songs/Pieces just use +New then on the Files page which pops up, use the + on the right hand side to add 1 or more blank sheets, and then you can switch to Fields to name the placeholder, press OK, then go end edit in your notes directly onto the page using annotation.

Ian's proposal of creating a dummy song / piece for every setlist is a great starting point for a workaround to get what you need with MobileSheets features that are already available.
Some additional ideas what you could try additionally:
- create a specific collection for your setlist notes to simplify filtering
- use a song in text or ChordPro format and the MobileSheets text editor to edit it (instead of an empty page and the annotations editor)
- create a template with something like an empty form to be filled out and start with "copy song"
